Scrumptious Saturday

Image
I'm feeling pretty yucky today, and I have no drive to do much of anything, and that includes fixing meals. But since The Husband is working a double, and I don't have any leftovers, I decided to try out a version of a video recipe I saw this morning for lunch today. Next time, I'll whip up a batch of cream cheese and feta crescent rolls to go along with it. Here's my take on the omelets in the video based on what I had in my kitchen: 8 eggs 3 handfuls of shredded cheese 1 handful of chopped, frozen spinach  Salt Pepper Garlic powder  A couple of splashes of milk All ingredients whisked together Scooped into muffin tin compartments with space (I obviously underestimated the space they would fill lol) to rise Baked at 350* for 20 minutes Enjoyed :)

Nutella Pumpkin Crepes

Image
This guy has been working incredibly hard the last week at work, and then he tested with a local police department on Monday for much of the day on very little sleep. So, I decided to whip up something new and tasty to treat him. Monday night right after dinner, I started fixing these Nutella Pumpkin Crepes . (Note to self--trying a new recipe right before bedtime is not the brightest idea you've ever had...). With the kids sitting in chairs by the stove, I followed the recipe. They ooh'd and aah'd as I let them smell the vanilla extract and the different spices before adding them in. They even got to test out the first one I made. Um, they LOVED it. It could be that it was smothered with deliciously-smooth Nutella... I got zero pictures of them "helping" or tasting because a hot stove and ingredients everywhere and wild, tired toddlers do not mix well. So. My crepes turned out more like pancakes and look nothing like the pictures of the on...

Breakfast for Dinner

Image
As I may have mentioned previously, I have a two week plan of meals written out. It helps with grocery planning, since I only go grocery shopping every two weeks (with a quick trip to pick up bananas and milk in between).   One of the dinners I fix is "breakfast for dinner," which also gives Jack a few days of actual breakfast, as well.  I usually fix blueberry waffles and scrambled eggs.  Last night, I made both, but I changed things up a little.  I fixed the eggs in the waffle iron. Mostly because I'm lazy and didn't want to have to use the skillet, but also because I thought it sounded neat.  Also, I totally stole the idea from Pinterest. I fixed the blueberry waffle mixture first. It's the Bisquick recipe with a cup of frozen blueberries and a few drops of almond extract added in.  The recipe makes between 12 and 15 waffles.  Then, I whipped up the eggs.  Ingredients which yielded 8 egg waffles: ...

Breakfast revealed

There were some very close and very yummy-sounding guesses (Jennifer, you were the closest! 10 points to you!) on the   last post !  Good job, y'all! I'm eating the very same breakfast right now, and I just can't tell you how much I enjoy it.  It fills us up  in a healthy, delicious way.  We like it so much that we've even had it for an after-the-gym-before-bedtime snack! The first ingredient (that all who took a guess got right) is two big spoonfuls of Greek yogurt.  We buy the vanilla flavor.  It has lots of protein!   The second (one of you guessed right!) is a handful (though I don't actually pour them into my hand because it's way too messy) frozen blueberries.  Good carbs! Third, I chop up (in my magic bullet blender!) lots of cashews! No one guessed this ingredient, but I would say it's my favorite one.  I love the flavor cashews adds to the mix.   And fourth, I sprinkle in some (a couple of you got this...

Any guesses...

...on what The Husband and I have had for breakfast most mornings this past month? 10 bonus points to the closest guess ;) Here's a snapshot to help you out...

Changes

Image
It was time for a change. A fresh start. "Out with the old and in with the new," as they say. So, instead of getting a wardrobe makeover or a haircut or a pedicure, I thought I'd change up some things here on the blog (though I'm crossing my toes that I'll get to redeem a gift card my generous MIL gave me for a pedicure posthaste !). I wanted more color, and I found this blog background with the gorgeous,  brilliantly-colored pillows and knew it was the one.  I edited a few things, added a bit more color here and there, and took some things away.  I like it very much, and I hope you like it, too! It feels so summery to me, like a fresh bouquet of flowers on the table, or a new comforter on the bed, or freshly-painted, neatly-trimmed toenails.  Y'all I really need a pedicure. It's em - barrassing . *Ahem* So, there's that, and here's this. At 11:00 last night, you know that time when great ideas tend to smack you around until you get up...

A couple of things

Image
I have just a couple of things to share with y'all, and then I need to get back to cleaning. One: My best friend since sixth grade will be here in less than 24 hours!! I have been counting down the days until she arrives (with her sweet baby girl). She'll be here until Friday afternoon, and I'm so thrilled that we get to spend some time together.  Y'all, this girl has been like a sister to me for over 18 years.  We've been there for each other in the best and worst of times.  All I had to do was say, "please come," and she packed up and drove hours to be with me the day I delivered Hadley.  All day, she sat in that room or slept in the waiting room.  She cried with me and held me.   She spent hours with me on the phone afterward.  She's the kind of best friend every girl should grow up with.  I can't believe we've known each for almost 19 years and that our friendship is still as strong as it is today.  We can talk about anything and ev...
