Garden Ravioli

Image
So, Saturday I wanted to try something new in the crockpot. I didn't have a recipe, but I had lots of things to work with.   I had a couple of jars of pasta on the shelf, a thing of stuffed ravioli and a bag of spinach in the freezer, and a box of cream cheese and a container of feta in the fridge. I wish I had some mushrooms, but there's always next time.  Ingredients: ~ 1 20 oz package ravioli (mine was stuffed with four cheeses) ~ 2 23.7 oz jars of Florentine Spinach & Cheese  ~ 3 oz of feta cheese ~ 1 8 oz box of cream cheese - cubed ~ 1 12 oz package of frozen spinach  I started with one jar (23.7 oz) of Florentine Spinach and Cheese pasta sauce.  I cubed a thing of cream cheese and tossed them in.  Then, I added the frozen spinach (12 oz).  Next, I poured in the package of frozen tortellini (20 oz--it's refrigerated when I buy it, but I stick it in the freezer, so it will last longer.) I, then, guesstimated and poured on about 3 oz of feta ch...

Pizza Casserole

Earlier in the week, I called my parents and invited them to join the kids and me for dinner Saturday evening while The Husband worked. I have a two-week meal plan already set up, so I knew what I was making ahead of time, and I was pretty excited to prepare it because I've only made it once before, and it turned out yummy that first time. I doubled the recipe this time to feed three adults and two little ones and to have enough left over for another meal.  I made this up (although I'm sure I'm not the first one to come up with this recipe or something really similar), so the measurements aren't precise. Here's the recipe, with pictures, if you'd like to try it out. It's super easy! Pizza Casserole Ingredients: ~2 cans of crescent rolls (16 total) ~1 jar (45 ounces) of the pasta sauce of your choice (I used fresh mushroom, and I've used the same jar for making this dish twice and still had enough left over for a third dish) ~1 large...

I <3 Crockpot Meals

Image
Oh, y'all.  As a mommy to an 18 month old and an almost 6 month old, I feel I'm fairly busy.  The days The Husband works afternoons-into-evenings are definitely the hardest for me. It's really nice to have help with dinners, baths, and bed-time routines. But, there are three days when I do those things on my own, and in order to preserve a small amount of my sanity, I make a crockpot meal for one of those nights (and we eat the leftovers the next night). Today, Monday, happens to be one of those days. I'm tired already thinking about tonight, haha! Anywho.  One of my all-time favorite crockpot recipes came from this website ,  which I found on Pinterest.  I changed it up, and we all love it. This morning, The Husband saw I was getting out the ingredients before he headed to work, and he left with a grin on his face. (Side note - I'm not a huge fan of meat, but if you are, check out her recipe instead. Or use mine and add whatever meat you want!)....
